Pear And Blackcurrant Crumbles


Crumbles are so easy to make that it is very difficult to make a had one, and everyone I know loves them. Il was very difficult to choose just one crumble recipe, because there are so many for toppings and fruit mixtures, as well as innumerable permutations and I like them all, to the same degree!


INGREDIENTS:


700 G/11/2 LB PEARS
300 G/10OZ BLACKCURRANTS,
FRESH OR FROZEN, THAWED ABOUT 2. TBSP VANILLA SUGAR
115 G/4 OZ PLAIN FLOUR
85 G/3OZ. DEMERARA SUGAR
115 G/4 OZ UNSALTED
BUTTER, DICED
115 G/4 OZ GROUND ALMONDS
2-3 TBSP SLIVERED ALMONDS
TO SERVE:
CUSTARD


Direction:


Set the oven to 180°C/350°F/Gas 4.


Peel, core and slice the pears and place in a 20-22.5 cm/8-9 inch shallow baking dish with the blackcurrants. Sprinkle over the vanilla sugar, according to the sweetness of the fruit and your taste.


Sift the flour into a mixing bowl, stir in the demerara sugar, add the butter and toss to coat in flour, then rub in until the mixture resembles breadcrumbs. Stir in the ground almonds.


Scatter evenly over the fruit, sprinkle over the slivered almonds, then press down lightly. Bake for about 40 minutes until the top is brown and the fruit cooked. Serve with Custard.
