Maple Syprup And Grapefruit Pancakes


One day when searching for something a little different for a pudding, I tried this recipe although I was a little unsure about how well it would he received. Silence followed serving, which immediately told me that it had met with complete approval.


The pancakes are really a cross between conventional pancakes and the thicker drop scones, or pikelets.


INGREDIENTS:


BATTER:
115 G/4 OZ PLAIN FLOUR
1 TsP BAKING POWDER.
1/2 Tsr GROUND CINNAMON
1 TSP CASTER SUGAR
I WHOLE EGG, SIZE 3, BEATEN
1 EGG YOLK
175 ML/6 FL OZ MILK
TOPPING:
3 GRAPEFRUIT
6 TBSP MAPLE SYRI,
15 G/V2 OZ UNSALTED BUTTER,
PLUS EXTRA FOR FRYING
TO SERVE:
VANILLA DAIRY ICE CREAM


DIRECTIONS:


To make the batter, sift. the flour with the baking powder, cinnamon and sugar into a bowl. Form a well in the centre, add the egg and egg yolk and gradually pour in the milk, drawing the dry ingredients into the liquids to make a smooth batter. I.eave to stand for 30 minutes.


To make the topping, remove the pith and peel from 2 of the grapefruit, then, holding 1 grapefruit over a bowl (to catch any juice), use a small sharp knife to cut down between the flesh and the skin of a segment and remove it. Repeat all the way around the grapefruit, then prepare the other peeled grapefruit in the same way. Squeeze the juice from the third grapefruit and pour into a small saucepan with any juice that has collected in the bowl. Stir in the maple syrup and set to one side.


Heat a heavy frying pan, then acid a small knob of butter. When it is hot, stir the batter and pour a couple of tablespoonfuls into the pan, spreading the mixture out to a circle approximately 9 cm/31/2 inches in diameter. Repeat two or three times Inure, but do not crowd the pan, and cook over a moderate heat until bubbles appear on the surface, then turn over and cook for a further 2 minutes until lightly browned underneath. Using a fish slice, transfer to a folded tea towel to keep warm while cooking the remaining batter.


Bring the grapefruit juice and maple syrup to the boil, lower the heat and swirl in the butter.


OTherve the pancakes topped with grapefruit segments and spoon the sauce onto the fruit. Serve with vanilla dairy ice cream.
